Ingredients

  • 2 tsp vegetable oil
  • 1/3 cup finely chopped onion
  • 1 tsp minced garlic
  • 1/2 tsp cumin
  • 1/4 cup warm water
  • 1/8 tsp ground red pepper
  • 15 oz can pinto beans, drained and rinsed
  • 2 tsp fresh lemon or lime juice

Instructions

  1. Heat oil in a medium saucepan over medium heat.
  2. Add chopped onion and cook until translucent, about 3 minutes.
  3. Stir in minced garlic, cumin, and ground red pepper.
  4. Cook for 30 seconds.
  5. Add drained and rinsed pinto beans and cook for 1 minute, mashing beans with a spoon.
  6. Stir in warm water and cook until water is absorbed.
  7. Remove from heat and stir in lemon or lime juice.
