Ingredients

  • 2 c. 100% bran
  • 1 1/4 c. skim milk
  • 1 c. all-purpose flour
  • 1/3 c. firmly packed brown sugar
  • 2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/4 c. melted margarine
  • 1/4 c. Egg Beaters egg product
  • 1/2 c. chopped apple
  • 1/2 c. seedless raisins

Instructions

  1. Mix bran and milk; let stand 5 minutes.
  2. Blend flour, brown sugar, baking powder, and baking soda; set aside.
  3. Add melted margarine and Egg Beaters to the bran mixture; stir well.
  4. Fold in chopped apple and seedless raisins.
  5. Combine wet and dry ingredients until just mixed.
  6. Pour batter into greased microwave-safe muffin cups.
  7. Microwave on high for 2-3 minutes or until a toothpick inserted in the center comes out clean.
  8. Let muffins cool slightly before serving.
