Ingredients

  • 1 1/2 cups peeled potatoes, cut into 1/2 inch cubes
  • 1 1/2 cups fresh broccoli flowerets
  • 1 cup thinly sliced carrot
  • 1/4 chopped onion
  • 1/2 teaspoon minced garlic
  • 1/8 teaspoon pepper
  • 1/4 cup water
  • 1 3/4 cups milk
  • 1-16 oz can kidney beans, drained
  • 1-10 3/4 oz can cheddar cheese soup, undiluted
  • 1 cup cheddar cheese, grated

Instructions

  1. Put potatoes, broccoli, carrot, onion, garlic, pepper, and water in a 3-quart microwave-safe bowl.
  2. Cover with a lid or vented plastic wrap.
  3. Microwave on high for 8-10 minutes, stirring once, until vegetables are crisp-tender.
  4. Add milk, kidney beans, and cheddar cheese soup. Cover and microwave on high for 6-8 minutes, stirring once, until vegetables are tender.
  5. Add grated cheddar cheese and hot pepper sauce, stirring until cheese is melted.
  6. Serve hot.
