Microwave Cheesy Chowder

Ingredients
- 1 1/2 cups peeled potatoes, cut into 1/2 inch cubes ⓘ
- 1 1/2 cups fresh broccoli flowerets ⓘ
- 1 cup thinly sliced carrot
- 1/4 chopped onion ⓘ
- 1/2 teaspoon minced garlic ⓘ
- 1/8 teaspoon pepper ⓘ
- 1/4 cup water ⓘ
- 1 3/4 cups milk ⓘ
- 1-16 oz can kidney beans, drained ⓘ
- 1-10 3/4 oz can cheddar cheese soup, undiluted ⓘ
- 1 cup cheddar cheese, grated
Instructions
- Put potatoes, broccoli, carrot, onion, garlic, pepper, and water in a 3-quart microwave-safe bowl.
- Cover with a lid or vented plastic wrap.
- Microwave on high for 8-10 minutes, stirring once, until vegetables are crisp-tender.
- Add milk, kidney beans, and cheddar cheese soup. Cover and microwave on high for 6-8 minutes, stirring once, until vegetables are tender.
- Add grated cheddar cheese and hot pepper sauce, stirring until cheese is melted.
- Serve hot.
