Ingredients

  • 3/4 cup boiling water
  • 1/2 pound dates, finely chopped
  • 1 3/4 cups sifted plain flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup sugar
  • 1 egg, well beaten
  • 1 cup shredded Cheddar cheese
  • 1 teaspoon vanilla
  • 3/4 cup chopped walnuts

Instructions

  1. Pour boiling water over dates; let stand for 5 minutes.
  2. Sift together flour, baking soda, salt, and sugar.
  3. Add the date mixture, beaten egg, shredded cheddar cheese, vanilla, and chopped walnuts.
  4. Mix well until combined.
  5. Pour the batter into a greased loaf pan.
  6. Bake at 350°F (175°C) for 45 to 50 minutes.
  7. Remove from the pan and cool on a rack.
  8. Serve sliced, optionally with softened cream cheese.
