Ingredients

  • 2 c. sugar
  • 1 1/2 c. oil
  • 4 eggs
  • 2 c. flour
  • 2 tsp. soda
  • 1 tsp. salt
  • 2 tsp. cinnamon
  • 3 c. grated fine carrots
  • 1/2 c. shredded coconut
  • 3/4 c. chopped nuts
  • 1/2 c. raisins

Instructions

  1. Mix sugar, oil, and eggs until thoroughly blended.
  2. Sift together flour, soda, salt, and cinnamon into the mixture and beat until smooth.
  3. Stir in all of the remaining ingredients: grated carrots, shredded coconut, chopped nuts, and raisins.
  4. Pour batter into a greased 13 x 9 1/2 x 2-inch pan.
  5. Bake at 325°F for 55 minutes.
  6. Frost with cream cheese frosting.
