Ingredients
- 1 Tbsp. olive oil ⓘ
- 1/2 lb. chicken breast cubes ⓘ
- 1 c. uncooked long-grain white rice ⓘ
- 1 medium onion, chopped ⓘ
- 1 clove garlic, minced ⓘ
- 1 1/2 c. chicken broth ⓘ
- 1 (8 oz.) can stewed tomatoes, chopped ⓘ
- reserve liquid from tomatoes ⓘ
- 1/2 tsp. paprika
- 1/8 to 1/4 tsp. ground red pepper ⓘ
- 1/8 tsp. ground saffron ⓘ
- 1/2 lb. medium shrimp, peeled and deveined ⓘ
- 1 small red pepper, cut into strips ⓘ
- 1 small green pepper, cut into strips ⓘ
Instructions
- Heat olive oil in a Dutch oven over medium-high heat until hot.
- Add chicken breast cubes and cook until browned.
- Add rice, chopped onion, and minced garlic. Cook, stirring, until onion is tender and rice is lightly browned.
- Add chicken broth, chopped stewed tomatoes, tomato liquid, paprika, ground red pepper, and saffron.
- Bring to a boil over high heat; stir to combine.
- Reduce heat to low, cover, and simmer for 10 minutes.
- Add shrimp, red pepper strips, green pepper strips, and green peas.
- Cover and simmer for another 10 minutes or until rice is tender, liquid is absorbed, and shrimp are opaque.
