Ingredients

  • 1/2 lb. ground beef or turkey
  • 4 eggs
  • 1/2 cup sliced green onion
  • 1/3 cup milk
  • 1/3 cup mayonnaise
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 3/4 cup shredded Cheddar cheese

Instructions

  1. Crumble ground beef or turkey into a 9-inch pie plate.
  2. Microwave at high power for 2 1/2 to 4 minutes until the meat loses its pink color.
  3. Break up the cooked meat and drain excess fat.
  4. In a medium bowl, combine eggs, sliced green onion, milk, mayonnaise, salt, and pepper.
  5. Pour the egg mixture into the pie plate with the cooked meat.
  6. Reduce microwave power to 50% (medium).
  7. Microwave for 4 minutes.
  8. Push the cooked portions to the center of the plate.
  9. Microwave for an additional 4 1/2 to 8 minutes or until almost set, lifting edges of the set egg after half the cooking time.
  10. Sprinkle shredded Cheddar cheese over the top.
  11. Microwave for 1 to 2 1/2 minutes or until the cheese melts.
  12. Let stand several minutes before serving.
