Ingredients

  • 8 cups water
  • 1/2 Spanish onion
  • 1 small zucchini
  • 1 cup whole wheat elbow macaroni
  • 1/2 small cabbage
  • 4 or 5 slices eggplant
  • 1 cup canned garbanzo beans
  • 3 tablespoons spaghetti sauce
  • 1 tablespoon olive oil
  • 2 tablespoons vegetable broth
  • seasoning

Instructions

  1. Pour water into a large pot and add all remaining ingredients.
  2. Bring to a boil, then reduce heat and simmer until the macaroni is tender, about 20 minutes.
