Ingredients

  • 1 meaty soup bone
  • 1 cup onion, chopped
  • 2 cups celery, diced
  • 2 cups carrot, diced
  • 1/2 cup barley
  • 2 teaspoons salt
  • 1 teaspoon celery salt
  • 1 teaspoon parsley flakes
  • 1/2 teaspoon pepper
  • 1/2 teaspoon marjoram
  • 1 (6 oz.) can tomato paste
  • 8 cups water

Instructions

  1. In a 5-quart casserole, combine the soup bone, onion, celery, carrot, barley, salt (if using), celery salt, parsley flakes, pepper, marjoram, tomato paste, and water.
  2. Stir to mix all ingredients well and cover the casserole.
  3. Set the microwave to Defrost at High (10) for 60 minutes.
  4. Then cook at Medium (5) for 99 minutes.
  5. During cooking, turn the casserole 1/4 turn twice to ensure even cooking.
