Mid-Eastern Lentil Soup

A hearty Middle Eastern lentil soup packed with flavors of cumin, coriander, and fresh herbs, perfect for comforting and nutritious meals suitable for all occasions.

Ingredients

  • 1 Tbsp. oil
  • 1/2 cup chopped onion
  • 1/2 cup chopped celery
  • 1/2 cup grated carrot
  • 1/2 cup grated apple
  • 1 glove garlic minced
  • 1/2 cup red or green lentils
  • 2 cups chicken stock
  • 3/4 tsp. cumin

Instructions

  1. Saute onion, celery, and garlic in oil for 2 to 3 minutes over medium heat.
  2. Rinse lentils and add to the pan along with chicken stock. Cover and simmer for 20 minutes.
  3. Add grated carrot, grated apple, cumin, and coriander. Continue simmering until vegetables and lentils are tender.
  4. Add parsley and salt to taste. Garnish with croutons before serving.
