Ingredients

  • 2 Tbsp. olive oil
  • 2 boneless, skinless chicken breasts
  • 1/2 onion, minced
  • 2 large garlic cloves, minced
  • 1/2 cup minced mint leaves
  • cumin powder to taste
  • 1/2 cup chicken broth
  • 1/4 cup currants
  • 1/2 cup plain yogurt

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Saute the chicken breasts for 5 to 8 minutes per side, until the meat is white throughout.
  3. Remove the chicken to a plate.
  4. Add the minced onion and garlic to the skillet and stir-fry for a few seconds.
  5. Add cumin powder to taste, 1/2 cup chicken broth, and 1/4 cup currants; simmer for about 2 minutes.
  6. Remove the pan from the heat and whisk in 1/2 cup plain yogurt and chopped mint.
  7. Add the cooked chicken back into the skillet and reheat slowly without boiling.
