- Heat the olive oil in a large skillet over medium heat.
- Saute the chicken breasts for 5 to 8 minutes per side, until the meat is white throughout.
- Remove the chicken to a plate.
- Add the minced onion and garlic to the skillet and stir-fry for a few seconds.
- Add cumin powder to taste, 1/2 cup chicken broth, and 1/4 cup currants; simmer for about 2 minutes.
- Remove the pan from the heat and whisk in 1/2 cup plain yogurt and chopped mint.
- Add the cooked chicken back into the skillet and reheat slowly without boiling.
