Ingredients

  • 1/4 cup margarine
  • 1/4 cup flour
  • 2 cups milk
  • 10 oz sharp cheddar cheese
  • 2 cups water
  • 2 cups diced potatoes
  • 1/2 cup sliced carrots
  • 1/2 cup diced celery
  • 1/4 cup chopped onion
  • 1 teaspoon salt
  • 2 cans cream style corn

Instructions

  1. Melt the margarine in a large pot over medium heat.
  2. Add the flour to the melted margarine and cook, stirring constantly, to make a roux.
  3. Gradually whisk in the milk, continuing to stir until the mixture thickens into a sauce.
  4. Add the shredded sharp cheddar cheese and stir until melted and smooth, creating a cheese sauce.
  5. Add water, diced potatoes, sliced carrots, diced celery, chopped onion, and salt to the cheese sauce.
  6. Bring the mixture to a boil, then reduce heat and simmer until vegetables are tender, about 20-30 minutes.
  7. Stir in the two cans of cream style corn and cook for an additional 5 minutes before serving.
