Ingredients

  • 1 pound ground pork
  • 1/2 pound ground lamb
  • 1/2 pound ground veal
  • 2 each carrots grated
  • 1 each onions grated
  • 1/4 cup crackers, saltine crushed
  • 1/4 cup oatmeal
  • 1/4 cup bread crumbs or less
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper
  • 1/2 cup sour cream
  • 1 each eggs
  • 1/2 teaspoon sage dried

Instructions

  1. Cook carrot and onion in microwave on high for 3 or 4 min.
  2. to soften.
  3. Combine all ingredients in large bowl and mix well.
  4. Add only enough bread crumbs so that the loaf holds together well.
  5. Form into a loaf and place into an Au gratin or shallow baking pan, large enough to hold it.
  6. Preheat the oven to 350 deg.
  7. and cook loaf for 1 1/2 hrs.
  8. or until internal temp.
  9. reaches 170 deg.
  10. Serve with salsa ketchup or your favorite sauce.
