Ingredients

  • 3 1/2 cups flour
  • 2 teaspoons baking soda
  • 1 1/2 teaspoons cinnamon
  • 1 teaspoon nutmeg
  • 1 cup sugar
  • 1/8 teaspoon salt
  • 1 cup oil
  • 4 eggs
  • 2/3 cup water
  • 2 cups canned pumpkin
  • 1 cup chopped pecans

Instructions

  1. Sift together the flour, baking soda, salt, cinnamon, and nutmeg. Add sugar and mix well.
  2. Make a well in the center and add the oil, eggs, water, and pumpkin. Mix until well combined.
  3. Fold in the chopped pecans.
  4. Pour batter into greased and floured loaf pans.
  5. Bake at 350°F (175°C) for 1 hour or until a toothpick inserted into the center comes out clean.
