Ingredients

  • 2 (10 oz.) pkg. frozen chopped spinach
  • 2 slices bread
  • 1/2 cup minced onion
  • 1/2 cup melted margarine
  • 1/4 teaspoon thyme
  • 1/4 teaspoon minced garlic
  • 1/2 cup heavy cream
  • 3 eggs
  • 1 cup Parmesan cheese

Instructions

  1. Thaw the spinach, drain, and squeeze dry. Chop until there are no large stems and place in a mixing bowl.
  2. Tear the bread into small pieces and add to the bowl.
  3. Add minced onion, melted margarine, thyme, minced garlic, heavy cream, beaten eggs, and Parmesan cheese to the bowl.
  4. Blend all ingredients well.
  5. Pour the mixture into a lightly buttered baking dish.
  6. Bake at 400°F (200°C) for about 20 minutes until lightly browned.
