Ingredients

  • 3 small cans minced clams
  • 1/2 cup chopped onions
  • 1/2 cup chopped green peppers
  • 1/4 pound cooked bacon, cut fine
  • 1/4 teaspoon Tabasco sauce
  • 35 or more Ritz crackers, crushed
  • 1/4 cup melted butter
  • 1/2 small can chopped pimentos

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Combine minced clams, chopped onions, chopped green peppers, cooked bacon, chopped pimentos, and Tabasco sauce in a mixing bowl.
  3. Mix in the melted butter and crushed Ritz crackers, reserving some crackers for topping if desired.
  4. Transfer the mixture to a buttered baking dish and spread evenly.
  5. Sprinkle remaining crushed crackers on top if desired.
  6. Bake in the preheated oven for 30 minutes or until golden brown.
  7. If the casserole appears too moist, add more crushed crackers on top and bake a few additional minutes.
