Minestra Soup is a hearty, vegetable-rich Italian dish featuring carrots, cauliflower, potatoes, and herbs, perfect for a comforting, healthy meal suitable for all seasons.

Ingredients

  • 2 Tbsp. oil
  • 2 carrots, sliced
  • 1 onion, sliced
  • 2 stalks celery, sliced
  • about 6 cups water
  • 1 bay leaf
  • salt and pepper
  • 1/2 small cauliflower, divided into flowerets
  • 2 small potatoes, diced
  • 1 clove garlic, crushed
  • 1 Tbsp. chopped parsley
  • grated Parmesan cheese

Instructions

  1. In a kettle, heat oil.
  2. Add carrots, onion, and celery and fry until just beginning to brown, stirring occasionally.
  3. Pour in water and add bay leaf.
  4. Season lightly with salt and pepper.
  5. Cover and simmer for 15 to 20 minutes.
  6. Add potatoes and cauliflower.
  7. Cook for 20 minutes longer or until potatoes are almost tender.
  8. Add the garlic and parsley and simmer for 10 more minutes.
  9. Remove bay leaf and taste for seasoning.
  10. Sprinkle grated Parmesan cheese just before serving.
