Mini Quicki Quiches are savory bite-sized treats featuring tender dough filled with shrimp or ham, complemented by rich eggs and flavorful seasonings, perfect for appetizers or brunch.

Ingredients

  • 8 oz. can Pillsbury refrigerated quick butterflake dinner rolls
  • 2 1/2 oz. can tiny shrimp, drained
  • diced ham
  • 1 egg
  • 1 Tbsp. brandy
  • 1 tsp. salt
  • dash pepper
  • 1 tsp. chopped pimento
  • 1/2 cup half and half

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Generously grease 24 miniature muffin cups.
  3. Separate the dough into 12 pieces.
  4. Divide each roll in half and press the dough into the muffin cups, covering the bottom and sides.
  5. Divide the drained shrimp or diced ham evenly among the shells.
  6. In a bowl, beat the egg slightly and add the brandy, salt, pepper, chopped pimento, half and half, and parsley flakes.
  7. Pour the egg mixture over the shrimp or ham in each muffin cup.
  8. Bake in the preheated oven for about 15 minutes or until the filling is set and golden.
