Ingredients

  • 1 lb. shelled pecans
  • 1 lb. pitted dates
  • 3/4 lb. candied cherries
  • 1 lb. candied pineapple
  • 3/4 c. flour
  • 3/4 c. sugar
  • 1/2 tsp. baking soda or baking powder
  • 1/2 tsp. salt
  • 3 eggs
  • 1 stick butter

Instructions

  1. Chop pecans, dates, cherries, and pineapple.
  2. Combine chopped pecans, dates, cherries, and pineapple in a large mixing bowl.
  3. Sift flour, sugar, baking soda (or baking powder), and salt together.
  4. Add the sifted dry ingredients to the chopped nuts and fruits and mix well, using hands.
  5. Beat eggs until foamy; add to the mixture and blend well.
  6. Pour melted butter over the mixture and mix thoroughly.
  7. Pack the mixture into small paper baking cups placed in muffin tins.
  8. Fill the cups full.
  9. Bake at 300°F (150°C) for about 40 minutes.
