Minted Lima Bean Salad

- In a medium-sized saucepan, cook lima beans in 1 cup water with 2 sprigs of mint.
- Do not overcook the beans.
- Drain the beans and rinse with cold water.
- Remove and discard the mint sprigs.
- In a small bowl, whisk together Dijon mustard, rice vinegar, olive oil, salt, pepper, and 2 teaspoons chopped fresh mint leaves to make the dressing.
- Pour the dressing over the beans and toss to combine.
- Chill the mixture in the refrigerator for at least an hour.
- Before serving, bring the salad to room temperature and toss with shredded Boston lettuce.
- Garnish with additional fresh mint leaves.
