Ingredients

  • 2 (10 oz.) packages frozen lima beans
  • 2 sprigs fresh mint
  • 1 tsp. Dijon mustard
  • 1 Tbsp. rice vinegar
  • 1 Tbsp. olive oil
  • 1/4 tsp. salt
  • 1/4 tsp. black pepper
  • 2 tsp. finely chopped fresh mint leaves

Instructions

  1. In a medium-sized saucepan, cook lima beans in 1 cup water with 2 sprigs of mint.
  2. Do not overcook the beans.
  3. Drain the beans and rinse with cold water.
  4. Remove and discard the mint sprigs.
  5. In a small bowl, whisk together Dijon mustard, rice vinegar, olive oil, salt, pepper, and 2 teaspoons chopped fresh mint leaves to make the dressing.
  6. Pour the dressing over the beans and toss to combine.
  7. Chill the mixture in the refrigerator for at least an hour.
  8. Before serving, bring the salad to room temperature and toss with shredded Boston lettuce.
  9. Garnish with additional fresh mint leaves.
