Ingredients

  • 1/2 lb. smoked sausage links, sliced
  • 1 1/2 cups self-rising cornmeal
  • 1 (8 3/4 oz.) can cream-style corn
  • 1 (8 oz.) carton sour cream
  • 2/3 cup vegetable oil
  • 2 large eggs
  • 3 to 4 green onions, chopped
  • 1 1/2 cups shredded Monterey Jack cheese with jalapeno peppers, divided

Instructions

  1. Brown the sausage links in a medium skillet and heat them through.
  2. Drain the sausage well and set aside.
  3. In a large bowl, combine the self-rising cornmeal, cream-style corn, sour cream, vegetable oil, lightly beaten eggs, and chopped green onions. Stir well.
  4. Pour half of the batter into a greased 10-inch cast-iron skillet.
  5. Arrange the cooked sausage slices on top of the batter.
  6. Sprinkle 3/4 cup of shredded Monterey Jack cheese with jalapenos over the sausage.
  7. Spread the remaining batter over the cheese layer.
  8. Bake at 450°F (230°C) for 25 minutes.
  9. Sprinkle the remaining 3/4 cup cheese on top and bake an additional 5 minutes or until the cheese melts and the cornbread is golden.
