Ingredients

  • 8 cups ripe cucumbers
  • 2 tablespoons pickling salt
  • 2 medium onions
  • 2 sweet peppers
  • 2 cups lima beans
  • 1 cup white vinegar
  • 2 teaspoons celery seed
  • 2 cups sugar

Instructions

  1. Peel cucumbers and cut into chunks.
  2. Mix cucumbers with pickling salt and cover with water.
  3. Let stand for 2 hours, then drain.
  4. Cook remaining ingredients (onions, peppers, lima beans, vinegar, sugar, celery seed) in a large pan.
  5. Add cucumbers to the cooked mixture and cook until tender.
  6. Pack the hot mixture into sterilized jars and seal.
  7. Process the jars in hot water bath for 10 minutes.
