Ingredients

  • 6 to 8 slices American cheese
  • 1 pkg. frozen spinach
  • 2 cups Cheddar cheese, grated
  • 8 eggs
  • 1/2 cup milk
  • small onion, chopped

Instructions

  1. Line the sides of a pie plate with cheese slices.
  2. Beat eggs in a bowl; add milk, chopped onions, and frozen spinach (thawed and drained).
  3. Stir in 1 1/2 cups grated Cheddar cheese.
  4. Pour the egg mixture over the cheese slices in the pie plate.
  5. Sprinkle the remaining cheese on top.
  6. Bake at 350°F (175°C) for 45 minutes or until the quiche is set.
  7. Let cool for 5 minutes before slicing and serving.
