Ingredients

  • 1/2 cup shortening
  • 1/2 cup sugar
  • 1 egg
  • 1/2 cup light molasses
  • 1/2 cup water
  • 1 1/2 cups sifted flour
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1 teaspoon coffee powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon cloves

Instructions

  1. Cream shortening and sugar until light and fluffy.
  2. Add egg and beat well.
  3. Mix in molasses and water until combined.
  4. Sift together flour, salt, baking powder, baking soda, coffee powder, cinnamon, and cloves.
  5. Gradually stir the dry ingredients into the creamed mixture until smooth.
  6. Pour the batter into a greased 9 x 13-inch pan.
  7. Bake at 350°F (175°C) for 25 minutes or until a toothpick inserted in the center comes out clean.
  8. While warm, frost with confectioners icing and cut into bars.
