Ingredients

  • 1/4 cup butter
  • 1/2 cup packed brown sugar
  • 1 (28 oz) can Elberta peach halves
  • 3 eggs, separated
  • 1 cup sugar
  • 1/2 cup peach juice
  • 1 teaspoon vanilla extract
  • 1 1/2 cups flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Melt butter in an 8-inch square baking pan.
  3. Sprinkle brown sugar over melted butter.
  4. Arrange 9 peach halves cut side down into the butter and brown sugar mixture.
  5. In a bowl, beat egg yolks until light and lemon-colored.
  6. Add sugar and continue beating until smooth.
  7. Beat in peach juice and vanilla extract.
  8. Sift together flour, baking powder, and salt, then fold into the egg yolk mixture.
  9. In a separate bowl, beat egg whites until stiff peaks form.
  10. Gently fold the egg whites into the batter.
  11. Pour the batter over the peaches in the baking pan.
  12. Bake for 50 to 60 minutes until a toothpick inserted comes out clean.
  13. While the cake is still warm, turn it onto a serving plate.
