- Melt butter in an 8-inch square baking pan.
- Sprinkle brown sugar over melted butter.
- Arrange 9 peach halves cut side down into the butter and brown sugar mixture.

- Add sugar and continue beating until smooth.
- Beat in peach juice and vanilla extract.
- Sift together flour, baking powder, and salt, then fold into the egg yolk mixture.
- In a separate bowl, beat egg whites until stiff peaks form.
- Gently fold the egg whites into the batter.
- Pour the batter over the peaches in the baking pan.
- Bake for 50 to 60 minutes until a toothpick inserted comes out clean.
- While the cake is still warm, turn it onto a serving plate.
