Ingredients

  • 1 cup sugar
  • 1/4 cup vegetable oil
  • 1 egg
  • 2 cups pinto beans, cooked and mashed
  • 1 1/2 cups flour
  • 1 teaspoon soda
  • 1/2 teaspoon salt
  • 1 teaspoon cloves
  • 1 teaspoon allspice
  • 1 teaspoon nutmeg
  • 2 cups raw chopped apples
  • 1 cup raisins
  • 1 cup chopped nuts

Instructions

  1. Grease and flour a large tube pan or 2 loaf pans. Preheat oven to 350°F (175°C).
  2. Cream together the sugar, vegetable oil, egg, and mashed pinto beans in a large bowl until thoroughly blended.
  3. In a separate bowl, sift together the flour, soda, salt, cloves, allspice, and nutmeg.
  4. Gradually add the dry ingredients to the bean mixture, beating well each time.
  5. Fold in the chopped apples, raisins, and chopped nuts.
  6. Pour the batter into the prepared pan or pans.
  7. Bake in the preheated oven for 1 hour and 15 minutes, or until done.
