Mom'S Split Pea Soup

Ingredients

  • 2 c. dry split peas
  • 10 c. cold water
  • 1 large onion, chopped
  • 2 carrots, chopped
  • 1 ham bone or 2 smoked ham hocks
  • 2 cloves garlic, minced
  • 1/2 tsp. salt
  • 1 tsp. ground black pepper
  • 1/2 tsp. marjoram
  • bacon fat

Instructions

  1. Soak peas overnight.
  2. Drain them.
  3. The next day, saute onion and carrots in bacon fat until tender.
  4. Add ham bone, garlic salt, pepper, marjoram and water to the drained peas.
  5. Bring to boil. Reduce heat; cover.
  6. Simmer for 3 hours, stirring often.
  7. Remove ham bone; trim off meat and return meat to soup.
  8. Adjust seasoning.
  9. Serve with hot croutons.
