Ingredients

  • 2 cups white rice
  • 7 oz. can diced green chilies
  • 3 zucchini
  • 3 tomatoes
  • 1 lb. Monterey Jack cheese
  • 2 cups sour cream
  • 1 tsp. oregano
  • 1 tsp. garlic salt
  • 1 bunch green onions
  • 1 (4 oz.) can chopped olives

Instructions

  1. Cook rice and place it on the bottom of the baking pan.
  2. Top the rice with grated Monterey Jack cheese, then add diced green chilies and chopped olives on top.
  3. Spread sliced zucchini over the layers, then arrange sliced tomatoes on top.
  4. Mix sour cream, chopped green onions, garlic salt, and oregano to make the topping.
  5. Spread the sour cream mixture evenly over the assembled layers.
  6. Bake at 350°F for 40 minutes until heated through and cheese is bubbly.
