Ingredients

  • 3/4 cup sugar
  • 1/2 cup shortening
  • 2 eggs
  • 4 cups flour
  • 1 teaspoon salt
  • 1 cup hot mashed potatoes
  • 1 package dry yeast
  • brown sugar
  • butter
  • cinnamon

Instructions

  1. Dissolve yeast in 1 cup warm water and let stand until foamy.
  2. In a large bowl, mix flour, salt, and sugar well.
  3. Make a well in the center of the flour mixture and add mashed potatoes, beaten eggs, shortening, and the dissolved yeast.
  4. Mix until a dough forms, then cover and let stand for 2 to 2 1/2 hours or until doubled in size.
  5. Spread the risen dough onto greased pans.
  6. Allow the dough to rise again until puffy.
  7. Sprinkle generously with brown sugar, dot with butter, and sprinkle with cinnamon.
  8. Bake at 375° to 400° for about 20 minutes or until golden brown.
