Ingredients

  • 1 stick butter, melted
  • 2 eggs, beaten
  • 1 cup plain flour
  • 1 1/2 cups crystallized mixed fruit, finely chopped
  • 1 1/2 cups light brown sugar
  • 1 teaspoon vanilla
  • 2 1/2 cups chopped pecans

Instructions

  1. Grease and flour the baking pans.
  2. Spread 2 cups of chopped pecans in the bottom of two 9 x 13-inch baking pans.
  3. Make a batter by mixing melted butter, sugar, beaten eggs, vanilla, and flour.
  4. Pour the batter carefully over the nuts in the pans. Do not mix the nuts into the batter.
  5. Sprinkle 1/2 cup of chopped pecans and the finely chopped mixed fruit over the batter.
  6. Bake at 300°F for 1 hour.
  7. Cut into small squares while hot and let cool in the pans.
  8. Remove from pans and store in an airtight container.
