Ingredients

  • 1 onion, chopped
  • 2 lb ground beef
  • salt to taste
  • pepper to taste
  • 1 large can green beans, drained
  • 1 can shoe peg corn, drained
  • 1 large can chopped tomatoes
  • 4 cups mashed potatoes
  • 2 jumbo eggs
  • 1.5 cups grated cheese

Instructions

  1. Brown ground beef and chopped onion in a skillet.
  2. Drain excess fat from the beef mixture.
  3. Mix the beef with drained green beans and shoe peg corn.
  4. Stir in chopped tomatoes, then season with salt and pepper.
  5. Spoon the beef mixture into two buttered pie pans.
  6. Beat the jumbo eggs and blend them into the mashed potatoes.
  7. Season the potato mixture with salt and pepper to taste.
  8. Spread the potato mixture evenly over the beef mixture, sealing to the edge of the pan.
  9. Sprinkle grated cheese evenly over the top.
  10. Sprinkle paprika over the cheese.
  11. Bake at 350°F (177°C) for 30 minutes until bubbly and golden.
