To enhance the spices, add a pinch of nutmeg or ginger. Make sure to pack the mixture tightly in the pans to ensure proper slicing after refrigeration.

Frequently Asked Questions

Can I use all-purpose flour instead of a mix of flours?

Yes, you can use all-purpose flour for this recipe. However, for a more unique texture and flavor, consider using a mix of whole wheat and all-purpose flour. This will add a nutty flavor that pairs well with the spices in the cookies.

How can I make these cookies vegan?

To make these Mountain Cookies vegan, replace the margarine with a plant-based butter and use flax eggs instead of regular eggs. To create one flax egg, mix one tablespoon of ground flaxseed with three tablespoons of water and let it sit until it thickens. This will help bind the ingredients together.

What can I do if the mixture is too sticky?

If the dough is too sticky, try adding a little more flour, one tablespoon at a time, until you reach the desired consistency. Alternatively, you can chill the dough for a longer period to make it easier to handle while slicing.
