Ingredients

  • 4 cups spinach, washed and dried
  • 3 scallions, including tops and bottoms
  • 2 tsp sugar
  • salt to taste
  • 5 slices country cured bacon
  • 2 Tbsp wine vinegar

Instructions

  1. Toss washed and dried spinach with scallions in a salad bowl.
  2. Sprinkle sugar and salt over the salad.
  3. Fry bacon slices until crispy; drain and reserve the bacon grease.
  4. Crumble bacon coarsely over the salad.
  5. Sprinkle wine vinegar over the salad.
  6. Pour hot bacon grease over the salad.
  7. Toss the salad to combine and serve immediately.
  8. Top with croutons before serving.
