Ingredients

  • 1 1/2 lb. hamburger
  • 1 large can tomatoes
  • 2 Tbsp. parsley, chopped

  • 3 medium eggplants
  • 2 sticks butter
  • 1/2 c. Romano cheese, grated
  • 1/4 c. red sweet wine

Instructions

  1. Brown potatoes in butter or oil until light brown, about 3 minutes.
  2. Arrange the browned potatoes in the bottom of a 9 x 12-inch pan and sprinkle with 3 tablespoons of bread crumbs.
  3. Brown the chopped onions and hamburger in half of the butter.
  4. Add chopped parsley, canned tomatoes, red wine, salt, and pepper to taste, and cook on low heat until the liquid is absorbed.
  5. Set the meat mixture aside to cool, then stir in 3 tablespoons of bread crumbs and mix well.
  6. Slice the eggplants lengthwise and fry each slice in butter until browned on both sides.
  7. Layer the prepared potatoes with half of the meat mixture, then add a layer of fried eggplants and repeat until all ingredients are used, ending with an eggplant layer on top.
  8. Pour the cream sauce over the top layer of eggplants.
  9. Bake the assembled casserole at 350° to 400°F for 1 hour until bubbling and golden.
