Ingredients

  • 2 1/2 to 3 lb chicken
  • 2 eggs
  • 1/2 cup dry bread crumbs
  • 1/4 cup butter
  • 1 (8 oz) can tomato sauce
  • 1/2 teaspoon dried basil
  • cooked egg noodles
  • 1/2 cup shredded mozzarella cheese
  • 1/4 teaspoon paprika
  • 1/4 tsp. paprika

Instructions

  1. Cut chicken into serving size pieces.
  2. Dip chicken into beaten eggs, then coat with dry bread crumbs.
  3. Heat butter in a skillet over medium heat.
  4. Cook chicken until browned on all sides.
  5. Stir in tomato sauce and dried basil.
  6. Reduce heat, cover, and cook over low heat for about 30 minutes, turning chicken every 10 minutes.
  7. Prepare mozzarella sauce by combining shredded cheese and paprika.
  8. Place cooked egg noodles in a 9 x 13-inch pan.
  9. Arrange cooked chicken on top of the noodles.
  10. Spoon the tomato sauce over the chicken.
  11. Sprinkle shredded mozzarella cheese and paprika over the top.
  12. Broil 6 to 7 inches from the heat source until cheese is melted and bubbly.
