Ingredients

  • 2 tsp margarine
  • 1/4 cup flour
  • 1 cup chicken broth
  • 1 cup skim milk
  • 1/2 tsp basil
  • 1/3 cup nonfat Parmesan cheese
  • 1 cup diced turkey ham
  • 8 cooked lasagne noodles
  • 1/2 cup chopped onion
  • 1 1/2 cups shredded zucchini
  • 1 cup shredded carrots
  • 1 cup nonfat cottage cheese
  • 1/2 cup shredded Mozzarella
  • 2 egg whites

Instructions

  1. Heat margarine in a saucepan.
  2. Whisk in flour.
  3. Gradually stir in chicken broth, skim milk, and basil.
  4. Cook and stir until thickened.
  5. Bring to a boil and stir for 1 minute.
  6. Stir in Parmesan cheese and diced turkey ham.
  7. Steam chopped onion until tender.
  8. Mix onion, shredded zucchini, shredded carrots, cottage cheese, shredded Mozzarella, and egg whites.
  9. Spread 1/4 cup of this mixture over each cooked lasagne noodle.
  10. Roll up each noodle firmly.
  11. Spread 1 cup of sauce in an 11 x 7-inch baking dish.
  12. Arrange the rolls, seam side down, in the dish.
  13. Cover with the remaining sauce.
  14. Cover with aluminum foil.
  15. Bake at 375°F for 20 minutes.
  16. Uncover and bake for an additional 10 to 20 minutes.
  17. Let stand for 5 minutes before serving.
