Cheesy Lasagne Roll-Ups

Ingredients
- 2 tsp margarine ⓘ
- 1/4 cup flour ⓘ
- 1 cup chicken broth
- 1 cup skim milk ⓘ
- 1/2 tsp basil ⓘ
- 1/3 cup nonfat Parmesan cheese ⓘ
- 1 cup diced turkey ham ⓘ
- 8 cooked lasagne noodles ⓘ
- 1/2 cup chopped onion ⓘ
- 1 1/2 cups shredded zucchini ⓘ
- 1 cup shredded carrots ⓘ
- 1 cup nonfat cottage cheese ⓘ
- 1/2 cup shredded Mozzarella ⓘ
- 2 egg whites ⓘ
Instructions
- Heat margarine in a saucepan.
- Whisk in flour.
- Gradually stir in chicken broth, skim milk, and basil.
- Cook and stir until thickened.
- Bring to a boil and stir for 1 minute.
- Stir in Parmesan cheese and diced turkey ham.
- Steam chopped onion until tender.
- Mix onion, shredded zucchini, shredded carrots, cottage cheese, shredded Mozzarella, and egg whites.
- Spread 1/4 cup of this mixture over each cooked lasagne noodle.
- Roll up each noodle firmly.
- Spread 1 cup of sauce in an 11 x 7-inch baking dish.
- Arrange the rolls, seam side down, in the dish.
- Cover with the remaining sauce.
- Cover with aluminum foil.
- Bake at 375°F for 20 minutes.
- Uncover and bake for an additional 10 to 20 minutes.
- Let stand for 5 minutes before serving.
