Ingredients

  • 16 oz. mozzarella cheese
  • 2 eggs
  • 1 Tbsp. parsley
  • salt
  • pepper
  • 1/2 cup flour
  • 1 cup bread crumbs

Instructions

  1. Cut the mozzarella cheese into 1-inch cubes.
  2. Beat eggs with parsley, salt, and pepper.
  3. Roll cheese cubes in flour.
  4. Dip the floured cubes into the egg mixture.
  5. Roll the cubes in bread crumbs.
  6. Dip the breaded cubes into the egg mixture again.
  7. Roll once more in bread crumbs.
  8. Chill the breaded cheese cubes in the refrigerator for 30 minutes.
  9. Fry the chilled cheese cubes in hot olive oil until the bread crumbs turn a nice golden brown, about 2 to 3 minutes.
  10. Serve hot.
