Ingredients

  • 1 1/2 Tbsp. finely minced onions
  • 2 Tbsp. butter or margarine
  • 1/2 c. finely chopped, cooked shrimp
  • 4 Tbsp. grated Parmesan cheese, divided
  • 3 Tbsp. dry bread crumbs
  • 3 Tbsp. sherry, divided
  • 3 tsp. parsley flakes
  • dash of salt
  • 12 very large or 24 small mushrooms, stems removed

Instructions

  1. In a small skillet, saute finely minced onions in butter until tender.
  2. Remove from heat and stir in cooked, chopped shrimp, 3 tablespoons of grated Parmesan cheese, bread crumbs, 2 tablespoons of sherry, parsley flakes, and a dash of salt.
  3. Stuff the mushroom caps with the shrimp mixture.
  4. Serve immediately or bake until heated through if desired.
