Mushroom Brown Rice Stuffing

Ingredients

  • 6 c. water
  • 1 tsp. salt
  • 1 box brown rice (about 2 c.)
  • 2/3 c. butter
  • 1 1/3 c. onion, chopped
  • 1 1/3 c. celery, sliced
  • 1 lb. mushrooms, sliced
  • 2 tsp. salt
  • 1 tsp. pepper
  • 1 1/2 Tbsp. poultry seasoning
  • 5 c. whole bran cereal

Instructions

  1. In large saucepot, bring water and 1 teaspoon salt to boiling. Gradually stir in rice.
  2. Cover; cook on low heat for 45 minutes, or until liquid is absorbed.
  3. In large skillet, melt butter.
  4. Add onion, celery and mushrooms; saute until soft.
  5. Stir in 2 teaspoons salt, pepper and poultry seasoning.
  6. Add to cooked brown rice.
  7. Add whole bran cereal.
  8. Sprinkle with milk; toss until moistened.
  9. Stuff lightly into turkey.
  10. Makes enough for 10 to 12-pound turkey.
