Mushroom Cap Appetizers

Delicious mushroom cap appetizers filled with a savory clam and bread crumb mixture, perfect for entertaining or as a flavorful snack for mushroom lovers.

Ingredients

  • 2 lb. mushrooms
  • 1 c. minced clams
  • 1/2 c. butter
  • 1 clove garlic, minced
  • 1/2 c. dried bread crumbs
  • 1/3 c. chopped fresh parsley
  • 3/4 tsp. salt
  • 1/4 tsp. pepper

Instructions

  1. Remove mushroom stems and mince them.
  2. Place mushroom caps rounded side down on a cookie sheet.
  3. Drain clams and save the liquid.
  4. Over medium heat, melt butter and brush it on the mushroom caps.
  5. In the remaining butter, sauté mushroom stems, garlic, and clam juice until tender, about 5 minutes.
  6. Stir in minced clams, bread crumbs, salt, and pepper.
  7. Tuck the clam mixture into the mushroom caps.
  8. Broil the stuffed mushrooms for 8 minutes.
