Instructions

  1. Cream 1 stick of margarine with 3 ounces of cream cheese until smooth.
  2. Blend in 1 1/2 cups of self-rising flour to make a soft dough.
  3. Wrap the dough in wax paper and chill for 1 hour.
  4. Chop the fresh mushrooms and onion finely.
  5. Sauté the chopped mushrooms and onion in 3 tablespoons of margarine for 5 minutes.
  6. Blend in 2 tablespoons of flour, 1 teaspoon of salt, dash of pepper, and 1/4 teaspoon of thyme.
  7. Stir in 1/4 cup of sour cream.
  8. Remove the mushroom mixture from heat and set aside.
  9. Roll the chilled dough out thinly on a floured surface.
  10. Pat the dough into a mini-muffin pan.
  11. Bake at 450°F for about 12 minutes until golden.
  12. Fill the baked pastry shells with the mushroom mixture and serve hot or cold.
