Ingredients

  • 4 chicken breasts
  • brandy
  • salt
  • pepper
  • marjoram
  • 6 Tbsp. sweet butter
  • 1/2 cup dry sherry
  • 2 cups cream
  • 4 egg yolks
  • nutmeg
  • 2 Tbsp. butter
  • 1/2 cup bread crumbs

Instructions

  1. Skin, bone, and divide the chicken breasts in halves.
  2. Rub the chicken with brandy and let stand for about 10 minutes.
  3. Season the chicken with salt, pepper, and marjoram.
  4. Heat until fragrant, then add sweet butter and sauté the chicken over medium heat for 6 to 8 minutes on each side.
  5. Remove the chicken to a heated platter and keep warm.
  6. In the same pan, add dry sherry and simmer over low heat until the liquid reduces by half.
  7. Add cream, beaten with egg yolks, and season with salt, pepper, and nutmeg.
  8. Cook and stir until slightly thickened.
  9. Pour the sauce over the chicken.
  10. In a small pan, melt butter and add bread crumbs, mixing with an equal amount of shredded Swiss cheese.
  11. Sprinkle this mixture over the chicken and sauce.
  12. Broil until the topping is golden and bubbly, being careful not to burn the crumbs.
