Ingredients

  • 30 large mushrooms
  • 1 medium onion
  • 2 celery stalks
  • 1/2 cup butter
  • 2 tablespoons parsley flakes
  • 1 box chicken stuffing mix
  • 1 small bottle ginger ale
  • 3/4 pound imitation crab meat
  • 1 large egg
  • 8 ounces Cheddar cheese

Instructions

  1. Wash the mushrooms and remove the stems.
  2. Chop the mushroom stems finely.
  3. Saute the chopped stems, diced onion, and diced celery in two tablespoons of butter until soft.
  4. Add parsley flakes to the sautéed mixture.
  5. Stuff the mushroom caps with the prepared mixture.
  6. Mix the imitation crab meat with the large beaten egg and grated Cheddar cheese.
  7. Place the stuffed mushrooms in a baking dish and top with the crab and cheese mixture.
  8. Prepare chicken stuffing mix according to package instructions, using ginger ale as specified.
  9. Bake the stuffed mushrooms in a preheated oven at 375°F (190°C) for about 30 minutes or until golden.
  10. Serve hot, garnished with additional parsley if desired.
