Ingredients

  • 12 large mushrooms
  • 3 Tbsp. olive oil
  • 2 Tbsp. parsley leaves
  • 1 scallion
  • 1 clove garlic
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • unflavored bread crumbs

Instructions

  1. Clean and remove mushroom stems.
  2. Mince the mushroom stems.
  3. Snip parsley and mince.
  4. Mince scallion and garlic.
  5. Brush the flat sides of mushroom caps with a little oil; place them in a low buttered baking dish.
  6. Heat the olive oil in a skillet over medium heat.
  7. Add minced mushroom stems, parsley, scallions, salt, pepper, and garlic; cook for about 2 minutes, stirring frequently.
  8. Remove from stove.
  9. Add enough bread crumbs to make a thick paste.
  10. Stuff the mushroom caps with the mixture.
  11. Sprinkle the tops with bread crumbs.
  12. Bake in a 350°F oven for 15 minutes.
