My Mom's Roast Beef features tender beef slow-cooked with flavorful vegetables and a savory tomato-based sauce. Ingredients

  • 2 to 3 lb. roast beef
  • 1 (10 1/2 oz.) can tomato soup
  • 1 (4 oz.) can mushrooms
  • 1 medium onion, sliced
  • 1 green pepper, sliced
  • 1/4 cup ketchup
  • 1 to 2 bay leaves
  • 1 to 2 garlic bulb sections, sliced

Instructions

  1. Place the roast beef in an 8 x 12-inch cake pan lined with foil paper, enough to wrap the meat after adding all ingredients.
  2. Top the meat with sliced onion, sliced green pepper, bay leaves, sliced garlic, and mushrooms.
  3. Pour the tomato soup over the ingredients and spread ketchup on top.
  4. Wrap the foil around the meat securely to enclose it.
  5. Bake in a preheated oven at 350°F (175°C) for 2 1/2 to 3 hours until the meat is tender.
