My Own Borscht
Ingredients
- 1 lb ground beef ⓘ
- 6 -8 cups water ⓘ
- 1 large white onion, thickly sliced ⓘ
- 1 large beet, cut into strips ⓘ
- 4 inches fresh ginger, cut into thin strips ⓘ
- 1 cup barley (or brown rice) ⓘ
- 2 carrots, diced finely ⓘ
- 1 cup spinach, chopped ⓘ
- 1 stalk lemongrass, minced (optional) ⓘ
- 4 garlic cloves, minced ⓘ
- 2 teaspoons sea salt ⓘ
- 1 teaspoon celery salt ⓘ
- 12 teaspoon ground black pepper ⓘ
- 1 tablespoon dill
- 1 tablespoon basil (fresh basil for garnish) ⓘ
- 1 lemon, juiced ⓘ
- 1 cup sour cream ⓘ
Instructions
- Place beef, water, onion, beet, ginger, barley or rice, lemon grass, garlic, salts, pepper, dill in large pot and bring to boil, stir and cover.
- Bring down heat to medium or medium high, stirring occasionally.
- Cook until everything done and tender, about 45 minutes.
- Taste and add more seasonings if needed.
- Add carrots, cook another five minutes.
- Remove from heat and pour into bowls.
- Add lemon juice to taste.
- Top with fresh spinach, basil and a dab of sour cream.
