Mystic Tofu
A hearty, flavorful tofu and tuna casserole with mushrooms, peas, and pasta, perfect for a comforting vegetarian-optional meal with rich mushroom and spice notes.
Ingredients
- 2 boxes extra firm tofu ⓘ
- 1 large onion, sliced
- 2 medium tomatoes, chopped (optional) ⓘ
- 1/2 tsp. cumin powder ⓘ
- 1 tsp. curry powder ⓘ
- salt to taste
- 2 Tbsp. cooking oil ⓘ
- 2 Tbsp. chopped cilantro leaves ⓘ
- 2 Tbsp. poppy seed ⓘ
- 2 cans cream of mushroom soup ⓘ
- 1 small onion ⓘ
- 1 large green pepper ⓘ
- 15 to 20 fresh mushrooms ⓘ
- oregano, basil, salt and pepper (sprinkle)
- 3 cans chunk white tuna, water drained ⓘ
- 1 small bag frozen peas ⓘ
- 1 box Ronzoni seashells ⓘ
Instructions
- In a bowl, combine cream of mushroom soup, sliced onion, cumin powder, curry powder, and milk; mix well.
- Add sliced mushrooms and diced green pepper to the mixture; stir to combine.
- Boil the pasta until 3/4 cooked, then drain.
- Add the cooked pasta to the mixture, along with drained tuna and frozen peas; stir gently to combine and distribute evenly.
