Ingredients

  • 1 1/2 lb Nabisco vanilla cream wafer cookies
  • 2 eggs
  • 3/4 cup soft butter
  • 1 cup powdered sugar
  • 1 cup pecans or walnuts
  • 1 large can apricots

Instructions

  1. Grind vanilla cream wafer cookies finely.
  2. Pack 2/3 of the ground cookies into a 9 x 13-inch pan and pat firmly to form a crust.
  3. Cream together the butter, powdered sugar, and eggs until smooth, then spread over the cookie crust.
  4. Chop the nuts (pecans or walnuts) and sprinkle evenly over the cream layer.
  5. Chop the drained apricots finely and layer over the nuts.
  6. Spread Cool Whip over the apricots layer.
  7. Sprinkle the remaining ground cookies over the top.
  8. Refrigerate the dessert for at least 12 hours before serving.
