  • 1 medium-sized onion, chopped
  • 1/2 c. corn kernels

Instructions

  1. Place the chicken, celery, carrots, whole onion, bay leaf, oregano, salt, pepper, and water in a large kettle.
  2. Bring to a boil.
  3. Lower the heat and simmer, partially covered, for 30 to 45 minutes or until the chicken is tender.
  4. Remove the chicken to a platter.
  5. Boil the broth over high heat until reduced to 2 quarts.
  6. Strain the broth and return it to the kettle.
  7. Throw away the cooked vegetables.
  8. Stir in the rice, chopped tomatoes, chopped green pepper, and chopped onion.
  9. Simmer, covered, for 20 minutes.
  10. Add the corn kernels and okra.
  11. Cook uncovered for 10 minutes or until the rice and vegetables are tender.
  12. Remove the chicken skin and bones.
  13. Cut the chicken meat into small cubes and add to the kettle.
  14. Bring the soup gently to a boil.
  15. Spoon into warmed soup bowls.
