Ingredients

  • 5 oz. lasagna noodles
  • 1 lb. lean ground beef
  • 16 oz. can tomato puree
  • 1/4 lb. mushrooms
  • 1 small onion
  • 1 clove garlic
  • 1 tsp. basil
  • 1 tsp. oregano
  • 1/2 tsp. thyme
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1 1/2 c. cottage cheese
  • 10 oz. mozzarella cheese
  • 1/2 c. freshly grated Parmesan cheese

Instructions

  1. Cook lasagna noodles until al dente, then drain and set aside covered.
  2. Crumble ground beef into a 2-quart glass mixing bowl.
  3. Cook the beef on high power for 4 minutes, stirring halfway through.
  4. Pour off the drippings from the cooked beef.
  5. In a separate pan, sauté chopped mushrooms, minced onion, and minced garlic until tender.
  6. Add tomato puree, basil, oregano, thyme, salt, and pepper to the cooked beef and mushroom mixture, simmer for 10 minutes.
  7. Layer cooked noodles, meat sauce, cottage cheese, sliced mozzarella, and Parmesan cheese in a baking dish.
  8. Repeat layers, ending with a layer of cheese on top.
  9. Bake at 375°F (190°C) for 25-30 minutes until bubbly and golden.
